Cantaloupe Breakfast Protein Smoothie

• 1 Banana, medium frozen. • 2 cups Cantaloupe, fresh or frozen

• 1 cup Milk • 1/2 cup Yogurt

• 1 cups Ice cubes

  1. Add cantaloupe melon, frozen banana, milk, yogurt, and ice to the blender.

  2. Blend until serve.

  3. Add toppings (optional) and enjoy! (You can also add vanilla protein powder for more nutrition) Top with hemp seeds, nut butter, blueberries, and/or raspberries if desired. The possibilities are endless!

Melon, Prosciutto, and Mozzarella Salad

- ½ cup extra virgin olive oil. ¼ cup white balsamic vinegar

1 tbsp. honey ⅛ tsp. black pepper

4 cups spring greens 8 mozzarella balls

2 cups cubed cantaloupe 4 slices prosciutto, rolled up

1 tbsp. fresh thyme

Dressing-

  1. In a small jar, shake together the oil, honey, and pepper.

Salad-

  1. Toss the rest of the ingredients together in a salad bowl with desired amount of dressing.

Spicy Melon Salsa

About 1/2 a small cantaloupe – peeled, seeded & cubed 1 shallot or 1/2 small sweet onion – diced

1-2 jalapenos – red and/or green – seeded & diced. Juice of one large lime

1/4 cup chopped cilantro S&P to taste

  1. Combine all ingredients in bowl and serve.

Shrimp and Melon Ceviche in Grilled Avocado

1½ lb Oregon Bay shrimp, rinsed, drained 2 limes, juice of
1 lemon, juice of 2 c melon, diced small (cantaloupe, honeydew or other)
1 sm red or white onion, diced fine 1 jalapeño or half a serrano, seeded and minced
¼ c fresh cilantro, rough-chopped pinch each salt and pepper, to taste
1 T extra virgin olive oil 3 ripe but firm avocados, split and pitted
Tajin for seasoning, as desired

  1. Combine all except avocados and Tajin. Taste and adjust seasonings. Rub split avocados with a drizzle of olive oil. Mark briefly on hot grill. Divide shrimp ceviche among avocado halves, topping with a sprinkle of Tajin, as desired. Serve immediately.
